Clams are most suited to steaming, they can be opened and served raw (like oysters). Clams are easy to prepare; check the shells are tightly shut just before cooking and rinse them under cold running water to remove any grit. Once cooked in liquid, i.e. stock the shells are steamed open and ready to eat.
